The extraction step in the Quechers method uses acetonitrile to extract analytes from the sample matrix. For protein rich veggies, this liquid extraction step will also precipitate proteins, removing them along with the sample matrix during centrifugation. So you don't have to be concerned with protein interferences in the subsequent analyses.
