In normal phase the chemical interactions between the strong component of the mobile phase and the stationary phase are much stronger than they are in reversed phase. Interactions like dipole-dipole, hydrogen bonding etc are kinetically slower. This makes forming an equilibrium between mobile phase and stationary phase a longer process. As such, running gradients in normal phase should be avoided.
